Description

This Chicken Taco Salad is a vibrant, flavorful dish combining marinated and pan-seared chicken thighs with fresh vegetables, black beans, and crispy tortilla chips. Ingredients

Chicken Marinade

  • 1.5 lbs. boneless skinless chicken thighs, trimmed of excess fat
  • 2 Tbsp olive oil
  • 2 Tbsp fresh lime juice
  • 3 tsp chili powder
  • 2 tsp ground cumin
  • 2 tsp minced garlic
  • 1 1/2 tsp salt (or to taste)
  • 1 tsp black pepper

Salad Components

  • 1 can black beans, drained and rinsed
  • 1 ear fresh corn, husked and kernels cut from cob (or 1 cup frozen corn)
  • 3/4 cup fresh salsa (homemade or store-bought)
  • 1/3 cup chopped cilantro
  • 6 cups chopped romaine lettuce
  • 4 oz. corn tortilla chips (white, yellow, or blue)
  • 1 cup shredded cheddar cheese (or Monterey Jack cheese)
  • 1 1/2 cups grape tomatoes, halved (or 2 roma tomatoes, chopped)
  • 1 avocado, chopped
  • 1/2 cup chopped red onion
  • 1/2 cup sour cream
  • Mexican hot sauce, to taste
  • 1 1/2 Tbsp olive oil (divided)
  • 3 tsp chili powder (divided)


Instructions

  1. Prepare the Marinade: In a large mixing bowl, whisk together 2 tablespoons fresh lime juice, 2 tablespoons olive oil, 3 teaspoons chili powder, ground cumin, minced garlic, 1 1/2 teaspoons salt (adjust to taste), and black pepper until well combined.
  2. Marinate the Chicken: Add the trimmed chicken thighs to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 1 hour, up to 24 hours, to allow flavors to develop.
  3. Preheat Skillet: Heat a cast-iron skillet over medium-high heat and drizzle in 1/2 tablespoon olive oil, swirling to coat the surface.
  4. Cook Chicken: Place the marinated chicken thighs in the skillet in a single layer with space between pieces. Cook undisturbed until the bottom is golden brown, about 6 minutes. Flip and continue cooking until the chicken reaches an internal temperature of 165°F (74°C), approximately another 6 minutes. Transfer the chicken to a plate and let rest for 5 minutes before slicing into small pieces.
  5. Prepare Bean and Corn Mixture: Wipe the skillet clean to remove any burnt bits, then return to medium-high heat. Add remaining 1/2 tablespoon olive oil and sauté the corn kernels for 2 minutes. Add drained black beans, fresh salsa, the remaining 1 teaspoon chili powder, and salt to taste. Cook for about 2 minutes until warmed through. Remove from heat and stir in chopped cilantro.
  6. Assemble the Salad: Divide chopped romaine lettuce evenly among four plates or shallow bowls. Top each with tortilla chips, the warm bean and corn mixture, sliced chicken, shredded cheese, halved grape tomatoes, chopped avocado, red onion, and a dollop of sour cream.
  7. Serve: Offer Mexican hot sauce on the side to add desired spice level. Serve immediately and enjoy your flavorful Chicken Taco Salad!
