Description

Delicious and easy-to-make Chicken Sausage Skewers with a colorful mix of zucchini, yellow squash, and mini peppers, grilled to perfection and perfect for a quick weeknight dinner or a weekend barbecue.

Ingredients

Protein

  • 1 12 oz package of Aidells Chicken Apple Sausage

Vegetables

  • 1 zucchini, sliced into rounds
  • 1 yellow squash, sliced into rounds
  • 1 cup mini peppers

Other

  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat Grill: Preheat your grill to medium-high heat to ensure even cooking and perfect grilling marks on your skewers.
  2. Prepare Vegetables: Place all sliced vegetables in a bowl, drizzle with olive oil, and sprinkle salt and pepper. Use your hands to toss and coat all pieces evenly in the oil and seasoning.
  3. Assemble Skewers: Thread the chicken sausage slices and vegetables onto skewers, keeping pieces similar in size so they cook evenly and fit well on the grill.
  4. Grill Skewers: Optionally drizzle the assembled skewers with a bit more olive oil. Place them on the hot grill and cook for 5-8 minutes per side, turning frequently to avoid burning and to ensure all sides are nicely charred and cooked through.
  5. Serve: Remove skewers from the grill and serve immediately, pairing them with rice, quinoa, or cauliflower rice and a fresh tossed salad for a balanced, delicious meal.

Notes

  • Keep vegetable pieces uniform in size for even grilling.
  • Turn skewers often to prevent burning and ensure even cooking.
  • Use soaked wooden skewers or metal skewers to prevent burning on the grill.
  • Serve with your choice of grain or salad to complete the meal.
  • Make sure the grill is properly preheated for best results.
