Ingredients
Sandwich
- 4 hoagie rolls
Chicken
- 1 pound chicken breasts or thighs, cut into thin strips
- 1 tablespoon olive oil
- Salt, to taste
- Pepper, to taste
- 1/2 teaspoon garlic powder
Vegetables & Cheese
- 1 tablespoon butter
- 8 ounces mushrooms, thinly sliced
- 1/2 green bell pepper, cut into thin strips
- 1/2 white or yellow onion, thinly sliced
- 1 clove garlic, minced
- 5-6 slices provolone cheese
Instructions
- Season the chicken: In a bowl, season the chicken strips evenly with salt, pepper, and garlic powder, tossing them thoroughly to coat all pieces.
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 7-8 minutes, stirring occasionally until the chicken is browned and cooked through. Remove the chicken from the skillet and keep warm.
- Sauté the vegetables: In the same skillet, melt butter over medium-high heat. Add sliced mushrooms, green bell pepper strips, and onions. Cook for about 5-6 minutes until vegetables begin to soften. Season with salt and pepper to taste. Add minced garlic and cook an additional 2 minutes until fragrant and vegetables are tender.
- Combine chicken and vegetables: Return the cooked chicken to the skillet with the vegetables and stir to combine everything evenly.
- Melt the cheese: Place the slices of provolone cheese over the chicken and vegetable mixture. Cover the skillet with a lid and let it cook for 1-2 minutes until the cheese melts.
- Assemble the sandwiches: Spoon the cheesy chicken and vegetable mixture evenly into the hoagie rolls. Serve immediately while hot.
Notes
- For extra flavor, consider adding a dash of smoked paprika or red pepper flakes to the chicken seasoning.
- Use chicken breasts for leaner meat or thighs for juicier texture.
- To make it gluten-free, substitute the hoagie rolls with gluten-free buns.
- You can add sautéed jalapeños for a spicy kick.
- Make sure to slice the chicken and vegetables thinly to ensure quick and even cooking.
