Ingredients

Chicken and Seasoning

  • 2 chicken breasts (cut into bite size pieces)
  • 1 tsp paprika
  • 1/4 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper

Vegetables and Aromatics

  • 4 oz shiitake mushrooms (thinly sliced)
  • 1 shallot (thinly sliced)
  • 3 cloves garlic (thinly sliced)

Other Ingredients

  • 2 tbsp butter
  • 1 1/4 – 1 1/2 cups sour cream (see notes)
  • 1 tsp Dijon mustard
  • 1 tbsp parsley (fresh, chopped)


Instructions

  1. Season the chicken: In a medium bowl, combine the chicken pieces with paprika, smoked paprika, salt, and pepper, tossing well to evenly coat the chicken.
  2. Cook the mushrooms: Melt 1 tablespoon of butter in a large pan over medium heat. Add the sliced shiitake mushrooms and cook, stirring occasionally, for about 5 minutes or until they are slightly browned. Remove the mushrooms from the pan and set aside on a plate.
  3. Cook the chicken and shallots: Using the same pan, melt the remaining tablespoon of butter over medium heat. Add the seasoned chicken and cook for 3-4 minutes per side until browned and nearly cooked through. Add the sliced shallot and continue cooking for an additional 3 minutes until the shallot is softened.
  4. Add garlic and combine: Stir in the sliced garlic and cook for 30 seconds until fragrant. Return the cooked mushrooms to the pan and stir to combine all ingredients.
  5. Simmer with sour cream: Add the sour cream and Dijon mustard to the pan. Stir well to blend all ingredients. Cover the pan with a lid and simmer on low heat for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  6. Finish and serve: Sprinkle the chopped parsley over the stroganoff. Serve immediately, ideally paired with a side such as baked zucchini with mozzarella for a complete meal.

Notes

  • Use full-fat sour cream for best taste and creamy texture; low-fat versions may cause the sauce to curdle.
  • Adjust the amount of sour cream depending on preferred sauce consistency.
