Description

A comforting and easy slow cooker recipe featuring tender chicken tenders cooked with creamy cornbread stuffing mix, chicken broth, and cream of chicken soup. Perfect for a hands-off meal that delivers hearty flavors and a satisfying texture.

Ingredients

Chicken

  • 1 pound chicken tenders (can use 3 or 4 chicken breasts or any parts of the chicken)
  • 1/4 teaspoon black pepper

Stuffing Mixture

  • 1 6 ounce box cornbread stuffing mix (You can use any stuffing mix)
  • 1 14.5 ounce can chicken broth
  • 1 10.5 ounce can cream of chicken soup (undiluted)

Instructions

  1. Prepare the Chicken: Sprinkle the black pepper evenly over the chicken tenders and place them in the bottom of a 3-quart crock pot to form the base layer.
  2. Mix the Stuffing: In a separate bowl, combine the cornbread stuffing mix, chicken broth, and undiluted cream of chicken soup. Stir until well blended to create a creamy stuffing mixture.
  3. Layer the Stuffing: Spread the prepared stuffing mixture evenly over the chicken in the crock pot, covering it completely.
  4. Cook: Cover the crock pot and cook on low heat for 5 to 6 hours or on high heat for 4 hours, or until the chicken is cooked through and tender.
  5. Serve: Remove the chicken from the crock pot and shred it with two forks. Serve the shredded chicken alongside the creamy stuffing. This recipe makes about six servings.

Notes

  • You can substitute chicken tenders with chicken breasts or any other preferred chicken parts.
  • Feel free to use any brand or type of stuffing mix according to your taste.
  • Cooking time may vary depending on the crock pot’s heat settings and size.
  • For a lower sodium version, consider using low sodium chicken broth and reduced-sodium cream of chicken soup.
