Description

Cherry Delight is a no-bake, easy-to-make dessert featuring a buttery graham cracker crust, a smooth and creamy cream cheese and whipped topping filling, topped with vibrant cherry pie filling. Perfect for a quick treat that sets in the refrigerator, this dessert offers a sweet combination of textures and flavors in just 20 minutes of prep time.

Ingredients

Crust

  • 1-1/2 cups graham cracker crumbs
  • 1/3 cup confectioners’ sugar
  • 6 tablespoons butter, melted

Filling

  • 1 package (8 ounces) cream cheese, softened
  • 1 cup confectioners’ sugar
  • 1 carton (8 ounces) frozen whipped topping, thawed (3 cups)
  • 1 can (21 ounces) cherry pie filling

Instructions

  1. Make the graham cracker crust: In a bowl, combine the graham cracker crumbs, confectioners’ sugar, and melted butter. Stir until well combined and the mixture resembles wet sand.
  2. Press the crust: Transfer the crumb mixture into the bottom of a greased 8-inch square pan. Press the crumbs firmly and evenly to form a compact crust layer.
  3. Prepare the filling: In a large mixing bowl, beat the softened cream cheese together with the confectioners’ sugar until the texture is smooth and free of lumps.
  4. Fold in whipped topping: Gently fold the thawed whipped topping into the cream cheese mixture until fully incorporated to maintain the light, airy texture.
  5. Assemble the dessert: Dollop the cream cheese filling over the graham cracker crust and spread evenly with a spatula to cover the crust completely.
  6. Add cherry pie filling: Spoon the cherry pie filling evenly over the cream cheese layer, distributing the cherries and syrup smoothly.
  7. Chill to set: Refrigerate the assembled dessert for at least one hour to allow it to set properly. For best results, chill for four hours or overnight before serving.

Notes

  • For easier slicing, chill the dessert overnight.
  • Use a greased pan or line it with parchment paper for easy removal.
  • Substitute cherry pie filling with other fruit pie fillings such as blueberry or strawberry for variation.
  • Ensure the cream cheese is fully softened before mixing to avoid lumps.
  • Let the frozen whipped topping thaw completely before folding in to maintain the proper texture.
