Description

This comforting Cheesy Ground Beef and Potatoes recipe combines tender cubed potatoes, flavorful lean ground beef, and a rich tomato-cream sauce, topped with gooey melted cheese. Perfect for a hearty weeknight dinner, it brings together simple ingredients with bold seasoning to deliver a deliciously satisfying meal in under an hour.

Ingredients

Vegetables and Aromatics

  • lbs potatoes (any kind), cut into 1 cm (½ inch) cubes
  • ½ medium onion, finely diced
  • ½ green bell pepper, finely diced
  • 2 cloves garlic, minced

Meat and Dairy

  • 1 lb lean ground beef
  • ¼ cup cream (any kind)
  • 1 cup shredded mozzarella or cheddar cheese

Pantry Items and Seasonings

  • 1 tablespoon oil
  • 2 tablespoons tomato paste
  • 1½ teaspoons seasoning salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon ground mustard
  • ¼ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes
  • ¾ cup low sodium beef or chicken broth
  • ½ cup tomato sauce (marinara or similar)

Garnish

  • Fresh chopped parsley or green onions for garnish

Instructions

  1. Heat the oil: Add the oil to a large skillet over medium-high heat, ensuring the skillet has a lid that fits for later use.
  2. Cook the potatoes: Cut the potatoes into 1 cm (½ inch) cubes and add them to the pan. Cook for about 5-6 minutes, stirring often until the potatoes are lightly golden and beginning to soften.
  3. Add onion and pepper: Stir in the finely diced onion and green bell pepper. Cook for 1-2 minutes until the onion becomes translucent.
  4. Brown the ground beef: Add the lean ground beef to the skillet. Cook and stir until the beef is fully browned. Drain any excess fat or soak it up with a paper towel to keep the dish lean.
  5. Season the meat mixture: Stir in tomato paste, minced garlic, seasoning salt, Italian seasoning, ground mustard, black pepper, and red pepper flakes. Cook and stir for 1 minute to develop the flavors.
  6. Add liquids and simmer: Pour in the broth, tomato sauce, and cream. Bring the mixture to a simmer, then cover and reduce heat to medium-low. Cook, stirring often, until the potatoes are tender, which may take some time. Taste and adjust seasonings as needed.
  7. Add cheese and serve: Remove the skillet from heat, uncover, and sprinkle the shredded cheese on top. Cover just until the cheese melts. Garnish with fresh chopped parsley or green onions and serve warm.

Notes

  • You can use any type of potatoes, but waxy potatoes hold their shape best.
  • Drain excess fat from the ground beef to reduce grease and make the dish lighter.
  • If you prefer a spicier dish, increase the red pepper flakes slightly.
  • For a richer flavor, use heavy cream instead of lighter creams.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
  • To make this recipe gluten-free, verify that your tomato sauce and seasoning salt contain no gluten additives.
