Ingredients
Spinach
- 3 (10 ounce) bags clean fresh spinach, roughly chopped
Dairy & Fats
- ¼ cup butter
- 1 ¼ cups heavy cream
- 6 slices provolone cheese
- ½ cup freshly grated Parmesan cheese
Vegetables & Aromatics
- 3 tablespoons minced white onion
- 2 tablespoons minced garlic
Seasoning
- Salt and pepper to taste
Instructions
- Gather Ingredients: Collect all the ingredients needed for the recipe to ensure a smooth cooking process.
- Cook Spinach: Heat a large skillet over medium-high heat, add the roughly chopped spinach and cook, stirring frequently, until wilted.
- Drain Spinach: Transfer the wilted spinach to a colander and press or squeeze out as much excess liquid as possible to prevent the dish from becoming watery.
- Sauté Aromatics: Using the same skillet, melt the butter over medium heat, then add the minced white onion and garlic. Cook and stir for about 5 minutes until they become tender and fragrant.
- Add Spinach and Cream: Return the drained spinach to the skillet and stir in the heavy cream to start building the creamy base.
- Melt Provolone Cheese: Tear the provolone slices into small pieces and lay them on top of the spinach mixture. Stir continuously until the cheese melts evenly and coats the spinach thoroughly.
- Add Parmesan Cheese and Thicken: Stir in the freshly grated Parmesan cheese and continue cooking and stirring until the mixture thickens to your desired consistency.
- Season and Serve: Season with salt and pepper to taste, then serve hot as a delicious side dish.
Notes
- Use fresh spinach for best flavor and texture, but baby spinach can be substituted if preferred.
- Make sure to squeeze out excess water from the spinach well to avoid a runny creamed spinach.
- Adjust the amount of cream and cheese based on desired richness.
- This dish pairs well with roasted meats and holiday turkey.
- For a lighter version, substitute heavy cream with half-and-half or milk, but the texture will be less creamy.
