This no-cook, easy-to-make salad is perfect for warm-weather gatherings, potlucks, or a light finish to any meal.
Ingredients
Fruit
- 2 cups Strawberries, hulled and cut into quarters
- 1 cup Blueberries, washed and dried
- 1 cup Raspberries, washed and dried
- 2 cups Blackberries, washed and dried
Cheesecake Dressing
- 1 (8 oz) package cream cheese, softened
- 1/2 cup sugar
- 8 oz Cool Whip, thawed
Instructions
- Prepare the Fruit: Slice and wash your strawberries, blueberries, raspberries, and blackberries. Lay them on paper towels to dry thoroughly to avoid excess moisture in the salad.
- Beat the Cream Cheese: In the bowl of a stand mixer, beat the softened cream cheese until it becomes smooth and creamy, ensuring no lumps remain.
- Add Sugar and Cool Whip: Add the sugar and thawed Cool Whip to the cream cheese. Continue mixing until the mixture becomes smooth and fully combined.
- Combine Half the Fruit and Dressing: Scoop half of your cheesecake mixture into a separate bowl, then add half of the prepared fruit to it. Gently fold the mixture and fruit together until fully incorporated without crushing the berries.
- Add Remaining Fruit and Dressing: Add the rest of the cheesecake mixture and the remaining fruit to the bowl. Again, gently fold until all ingredients are evenly combined, maintaining the berries’ integrity.
- Chill and Serve: Refrigerate the fruit salad until ready to serve. This allows the flavors to meld and the salad to chill perfectly for a refreshing dessert.
Notes
- Ensure berries are fully dried before mixing to prevent a watery salad.
- Use softened cream cheese for easier mixing and a smoother texture.
- Gently folding preserves the integrity of the berries and prevents them from bruising.
- Chill for at least 1 hour for best flavor and texture.
- This recipe can be doubled for larger gatherings.
