Juicy seasoned ground beef is sautéed with onions, mixed with creamy mayonnaise, layered with cheddar cheese, and baked inside soft dinner rolls topped with buttery sesame seeds. Ingredients
Beef Mixture
- 2 lb lean ground beef (90/10 or 93/7 fat content)
- 1/2 Tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/2 large yellow onion (finely diced)
- 1/4 cup mayonnaise
Cheese and Bread
- 8 slices medium cheddar cheese
- 6 oz medium cheddar (shredded, or more sliced cheese can be used)
- 24 dinner rolls (or 2 packs of 12)
Topping
- 2 Tbsp unsalted butter (melted, plus more to grease baking sheet)
- 1 Tbsp sesame seeds
Instructions
- Preheat and prepare baking sheet: Preheat your oven to 350˚F. Generously butter the bottom of a rimmed baking sheet to prevent sticking and add flavor.
- Cook the beef and onions: Heat a large skillet over medium-high heat and add 1/2 tablespoon of olive oil. Add the finely diced onion and the ground beef, breaking it up with a spatula. Season the mixture with salt, black pepper, and garlic powder. Sauté over medium-high heat until the beef is fully cooked through, then remove the skillet from heat.
- Drain excess fat and mix in mayo: Tilt the skillet to spoon off and discard any excess fat from the cooking process. Stir 1/4 cup of mayonnaise into the cooked ground beef and onion mixture until well combined. This adds creaminess and moisture to the filling.
- Assemble the sliders: Slice the dinner rolls in half horizontally. Place the bottom halves on the prepared baking sheet, then layer each with a slice of cheddar cheese. Evenly spread the beef mixture over the cheese using the back of a spatula to square off the edges. Sprinkle the shredded cheddar cheese evenly over the beef layer.
- Add tops and finish: Place the top halves of the buns, cut-side down, over the assembled sliders. Brush the tops generously with the melted butter and immediately sprinkle with sesame seeds for flavor and a beautiful golden finish.
- Bake: Place the sliders in the preheated oven and bake for 12 to 15 minutes, or until the cheese is melted and the tops of the buns are golden brown and toasted. Remove from oven and serve warm.
