Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and position an oven rack in the lower-middle area, leaving at least 5 inches (13 cm) of space above it to allow the popovers to rise fully. Place a 12-cup muffin pan inside the oven to heat while making the batter.
- Prepare Batter: In a large mixing bowl, whisk together the melted butter, eggs, and salt until combined. Gradually whisk in half of the milk. Add the flour and whisk continuously until the mixture becomes completely smooth without lumps. Then add the remaining milk and whisk until fully blended.
- Prepare Muffin Pan: Carefully remove the preheated muffin pan from the oven and spray all surfaces generously with non-stick cooking spray, including between the cups to prevent sticking. Pour or ladle the batter evenly into each muffin cup, filling just below the rim. If using, sprinkle the shredded Gruyère cheese evenly over the top of the batter.
- Bake Popovers: Return the muffin pan to the oven and bake for 40 to 50 minutes until the popovers are puffed up and golden-brown. Avoid opening the oven door before the 35-minute mark to prevent the popovers from deflating prematurely.
- Serve: Remove the popovers from the pan and place them on a serving platter. Serve immediately for best texture and flavor. Note that they will naturally deflate slightly as they cool.
