Ingredients

Cauliflower and Seasoning

  • 1 head cauliflower, cut into eighths

  • 2 tablespoons toasted pepitas
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint, chopped


Instructions

  1. Preheat the oven: Set your oven to 425 degrees Fahrenheit to prepare for roasting the cauliflower, which ensures it cooks evenly and develops a nice char.
  2. Season and roast the cauliflower: In a large bowl, toss the cauliflower pieces with olive oil, cumin, smoked paprika, salt, turmeric, and black pepper until each piece is evenly coated. Spread the cauliflower out in a single layer on a sheet pan. Roast in the preheated oven for 25 minutes, flipping the pieces halfway through to ensure even cooking and charring.
