A fresh and vibrant Cauliflower Tabbouleh Salad that uses cauliflower couscous as a low-carb alternative to traditional bulgur wheat. Ingredients

Salad Base

  • 1 small head cauliflower (about 3 cups cauliflower couscous)
  • 4 cups parsley leaves and tender stems
  • 1 1/2 cups mint leaves
  • 1/2 cup chopped scallions
  • 2 cloves garlic

Vegetables

  • 3/4 cup finely chopped ripe tomatoes
  • 1 cup finely chopped cucumber

Seasoning and Dressing

  • 1/2 tsp salt
  • 3 tbsp lemon juice
  • 1/3 cup extra virgin olive oil


Instructions

  1. Prepare cauliflower couscous: Cut the small head of cauliflower into florets. Place them in a food processor and pulse until they reach a fine, powdery consistency, finer than typical cauliflower rice. Transfer this to a large bowl.
  2. Process herbs and aromatics: Add parsley leaves and tender stems, mint leaves, garlic cloves, and scallions to the food processor. Pulse until the mixture is chopped into small bits. Transfer this herb mixture to the bowl with the cauliflower couscous.
  3. Combine vegetables and seasoning: Add the finely chopped ripe tomatoes and cucumber to the cauliflower and herb bowl. Season the mixture with salt, then add lemon juice and extra virgin olive oil. Mix well to combine all the flavors.
  4. Rest the salad: Allow the salad to sit for approximately 10 to 15 minutes before serving to let the flavors meld beautifully.
