Ingredients
Vegetables
- 1 medium head cauliflower
- 2 leeks (white and light green parts only)
- 4 cloves garlic (minced)
- 6 sprigs fresh thyme
Fats & Oils
- 2 tablespoons olive oil (divided)
- 2 tablespoons unsalted butter
Liquids & Seasonings
- 4 cups low sodium vegetable broth
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper (or to taste)
- 1 tablespoon fresh lemon juice
Instructions
- Preheat and Prepare Cauliflower: Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper to prevent sticking and promote even roasting.
- Roast Cauliflower: Cut the cauliflower into florets, pat them dry thoroughly, then spread evenly on the prepared baking sheet. Drizzle 1 tablespoon of olive oil over the cauliflower and toss to coat evenly. Roast in the oven for 30 minutes until the edges turn golden brown and develop a rich, caramelized flavor.
- Prepare Leeks: While the cauliflower roasts, trim and clean the leeks by cutting the white and light green parts in half lengthwise, then slice into ¼-inch wide half moons. Rinse well in cool water or use a salad spinner to remove any dirt or grit, then drain thoroughly.
- Sauté Aromatics: In a large Dutch oven or heavy-bottomed pot, heat the remaining 1 tablespoon olive oil and butter over medium heat until melted and shimmering. Add the chopped leeks and cook for about 4 minutes, stirring occasionally until they soften and become fragrant.
- Add Garlic: Stir in the minced garlic and sauté for another 30 seconds to release its aroma without burning.
- Simmer Soup Base: Pour in the vegetable broth, add the roasted cauliflower, fresh thyme sprigs, salt, and black pepper. Stir well to combine all ingredients.
- Cook Soup: Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the soup simmer gently for 15 minutes to meld the flavors and tenderize the cauliflower further.
- Remove Thyme Stems: Use a fork or spoon to fish out the thyme sprigs, discarding the stems but leaving any leaves that may have fallen into the soup.
- Puree the Soup: Carefully transfer the hot soup to a countertop blender in batches if necessary. Remove the center piece from the blender lid, cover the opening with a kitchen towel to vent steam safely, and blend until completely smooth and creamy.
- Finish and Serve: Return the pureed soup to the pot, stir in the fresh lemon juice, and adjust seasoning with additional salt and pepper if needed. Serve warm for a delicious, hearty meal.
Notes
- Make sure to dry the cauliflower thoroughly before roasting to ensure even browning and crunchy edges.
- Leeks can trap dirt; washing them carefully is crucial to avoid grit in your soup.
- If you prefer a richer soup, substitute part of the vegetable broth with a splash of cream or coconut milk.
- For a vegan version, replace the butter with additional olive oil or a plant-based butter alternative.
- Use caution when blending hot liquids; venting and covering with a towel helps prevent pressure build-up.
