Ingredients
Vegetables
- 1 head cauliflower (or 4 cups), cut into thin slices
- 4 green onions, sliced
Dairy
- 2 cups Swiss Gruyere cheese, shredded (can also use just Swiss cheese)
- 1 1/2 cups heavy cream
Pantry
- Salt, to taste
- Black pepper, to taste
- Cooking spray, for greasing the baking dish
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Spray an 8×10 inch casserole dish with cooking spray and set it aside to prevent sticking.
- Slice the Cauliflower: Thinly slice the cauliflower into even slices. This layering technique helps the cauliflower cook evenly and absorb flavors.
- Layer Cauliflower: Place half of the sliced cauliflower in an even layer in the prepared baking dish.
- Add Cheese and Green Onions: Sprinkle half of the shredded Gruyere cheese over the cauliflower layer. Evenly distribute the sliced green onions on top of the cheese. Season with salt and black pepper to taste.
- Add Remaining Cauliflower: Layer the rest of the sliced cauliflower evenly over the cheese and green onions.
- Pour Heavy Cream and Top with Cheese: Pour 1 1/2 cups of heavy cream evenly over the cauliflower layers. Top the casserole with the remaining shredded Gruyere cheese.
- Cover and Bake: Cover the baking dish with foil and bake in the preheated oven for 30 minutes. This helps the cauliflower cook through while melting the cheese.
- Remove Foil and Continue Baking: Remove the foil and bake uncovered for an additional 40 minutes, or until the cauliflower is fork-tender and the cheese is golden and bubbly. Check periodically to avoid over-browning.
- Rest Before Serving: Let the casserole sit for 5 minutes after taking it out of the oven to allow the sauce to thicken slightly before serving.
- Store Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3-4 days.
Notes
- For a milder flavor, substitute Gruyere with regular Swiss cheese.
- Make sure to slice the cauliflower evenly for uniform baking.
- Adjust seasoning with salt and pepper to taste before baking.
- Covering the casserole initially helps trap steam and cook the cauliflower through.
- Letting the casserole rest allows the cream sauce to thicken and enhances texture.
- This recipe is naturally gluten-free and keto-friendly.
