Description

Delicious and nutritious Carrot Cake Overnight Oats combine shredded carrots, rolled oats, chia seeds, warm spices, and dairy-free milk for a wholesome, make-ahead breakfast that’s both vegan and gluten-free. Sweetened naturally with maple syrup and raisins, this creamy, no-cook recipe is perfect for busy mornings and delivers the comforting flavors of carrot cake in a healthy overnight oats format.

Ingredients

Main Ingredients

  • 1 carrot (shredded – you can use orange or purple carrots)
  • 1 cup rolled oats
  • 2 tbsp chia seeds
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tbsp maple syrup
  • 4 tbsp raisins
  • 1.5 cups dairy-free milk (soy milk recommended)
  • 1/4 cup dairy-free yogurt (soy yogurt recommended)
  • 4 pecans (for topping)

Instructions

  1. Prepare the Carrots and Mix Dry Ingredients: Shred the carrot finely and divide it evenly between two serving jars or containers. Add the rolled oats, chia seeds, ground cinnamon, ground nutmeg, maple syrup, and raisins into each jar. Stir each jar well to combine all dry ingredients and the shredded carrot evenly.
  2. Add Milk and Combine: Pour the dairy-free milk equally into the jars over the dry mixture. Stir thoroughly to ensure all ingredients are well mixed and the oats begin to soak in the liquid.
  3. Refrigerate Overnight: Seal the jars with lids or covers and place them in the refrigerator. Let the oats soak and set overnight, approximately 12 hours, to soften and absorb flavors.
  4. Serve with Toppings: Before eating, give the oats one more stir to redistribute ingredients. Top each serving with a dollop of dairy-free yogurt, a few pecans for crunch, and if desired, an extra sprinkle of shredded carrot for added texture and flavor.

Notes

  • Use either orange or purple carrots depending on preference and availability.
  • For a sweeter taste, adjust maple syrup quantity or add a little vanilla extract to the mix.
  • Substitute dairy-free milk and yogurt with regular dairy versions if preferred.
  • Can be prepared up to 2 days in advance when stored properly in the fridge.
  • Chia seeds help thicken the oats and add omega-3 fats and fiber.
