Ingredients

Energy Balls

  • 1 cup medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts

  • pinch of salt
  • 1 tsp vanilla extract

For Rolling

  • 1/2 cup shredded unsweetened coconut (extra for rolling)


Instructions

  1. Combine Ingredients: Add the medjool dates, shredded carrots, walnuts, chia seeds, shredded coconut, cinnamon, nutmeg, salt, and vanilla extract into a food processor. Pulse several times until the mixture is well combined and forms a sticky dough.
  2. Form Balls: Using a spoon, scoop out portions of the dough and roll each portion between your palms to create smooth balls about 1 to 1.5 inches in diameter.
  3. Coat with Coconut: Roll each energy ball in the extra shredded coconut until fully coated, which adds texture and a subtle sweetness to the exterior.
  4. Chill to Set: Place the coated energy balls on a tray or plate and refrigerate for at least one hour to firm up and develop flavors before serving.
