Description

A deliciously savory and sweet grilled cheese sandwich featuring caramelized onions, honeycrisp apples, sharp cheddar, and creamy brie on sourdough bread, enhanced with fragrant sage butter for a perfect balance of flavors and textures.

Ingredients

Bread and Butter

  • 4 slices sourdough bread
  • 6 tbsp unsalted butter, divided (room temperature)
  • 1 tbsp olive oil

Cheese

  • 8 oz cheddar cheese, grated
  • 2 oz brie cheese, sliced into 1/2″ slivers

Produce & Herbs

  • 1 honeycrisp apple, thinly sliced
  • 2 large yellow onions, sliced 1/2 inch thick
  • 1 tbsp fresh sage, chopped

Seasoning

  • 2 tsp kosher salt (divided)

Instructions

  1. Caramelize Onions: Heat 2 tablespoons of unsalted butter in a skillet over medium heat. Add the sliced onions and stir every few minutes. After 10 minutes, add 1 teaspoon kosher salt. Continue cooking and stirring every few minutes for an additional 30-40 minutes until onions are golden and caramelized. Add 1 tablespoon water if the skillet becomes too dry.
  2. Prepare Sage Butter: In a small bowl, combine the chopped fresh sage with 4 tablespoons of unsalted butter and 1 teaspoon kosher salt, mixing thoroughly to create fragrant sage butter.
  3. Assemble Sandwiches: Place one slice of sourdough bread on your work surface (unbuttered side up). Layer brie cheese first, followed by grated cheddar, then arrange thinly sliced apples in a slightly overlapping single layer. Spoon 1/4 cup of the caramelized onions over the apples, top with additional cheddar cheese, and finish with the second slice of bread. Spread 1 tablespoon of the prepared sage butter on the top slice of bread.
  4. Cook Sandwiches: Heat a skillet over medium heat with 1 tablespoon olive oil. Place the sandwiches in the skillet with the buttered side down. Evenly spread the remaining sage butter on the tops of the exposed bread slices. Cook each side for about 6 minutes or until the bread is golden brown and the cheese inside is melted. Serve warm and enjoy!

Notes

  • Use honeycrisp apples for the best balance of sweetness and tartness that pairs well with the cheese.
  • Low and slow cooking for the onions ensures better caramelization without burning.
  • Sourdough bread adds a nice sturdy texture and tangy flavor to hold all ingredients well.
  • Feel free to swap cheddar cheese with your preferred sharp cheese if desired.
  • Make sure the butter is at room temperature for easy spreading and even cooking.
