Description

A fresh and vibrant Caprese Tortellini Salad featuring tender cheese tortellini, juicy cherry tomatoes, creamy mozzarella, and aromatic basil tossed in a simple olive oil and balsamic dressing, finished with a sweet balsamic glaze. Perfect as a quick and easy cold pasta salad for a light lunch or side dish.

Ingredients

Main Ingredients

  • 9 ounce package fresh cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 4 ounces small mozzarella balls (ciliegine), halved
  • 1/4 cup fresh basil, sliced

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Sea salt, to taste

To Serve

  • Balsamic glaze, for drizzling

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the fresh cheese tortellini and cook according to the package instructions until al dente. Drain the pasta and immediately rinse under cold water for 1-2 minutes to stop the cooking process and cool the tortellini.
  2. Combine Ingredients: In a large mixing bowl, combine the cooled tortellini, halved cherry tomatoes, halved mozzarella balls, and sliced fresh basil. Add the extra virgin olive oil, balsamic vinegar, and a pinch of sea salt. Gently toss all the ingredients together until evenly coated and combined.
  3. Serve: Transfer the salad to a serving dish and drizzle the balsamic glaze over the top just before serving. Serve chilled or at room temperature, and enjoy this fresh, flavorful salad.

Notes

  • For best results, use fresh cheese tortellini available in the refrigerated section of your grocery store.
  • You can substitute fresh mozzarella balls with diced mozzarella if ciliegine is unavailable.
  • Adjust the amount of balsamic vinegar and olive oil according to your taste preferences.
  • Make sure to rinse the cooked tortellini under cold water to cool and prevent them from sticking together.
  • This salad can be made a few hours in advance and refrigerated; drizzle balsamic glaze just before serving to keep presentation fresh.
