Ingredients

Rice Seasoning

Sushi Rice

Filling

  • 1/2 cup mayonnaise
  • 1 teaspoon lemon juice

  • 4 sheets roasted seaweed
  • Avocado slices (optional)
  • Cucumber sticks (optional)


Instructions

  1. Prepare the Sushi Rice Seasoning: In a small saucepan over high heat, whisk together the rice vinegar, sugar, and salt until the sugar dissolves completely. Then, fold this seasoning mixture gently into the warm cooked sushi rice to flavor it evenly without mashing the grains.
  2. Make the Crab Filling: Place the imitation crab in a food processor and pulse until it is finely minced. Transfer the minced crab to a medium bowl and mix in the mayonnaise, lemon juice, salt, and optional black pepper until well combined, creating a creamy filling.
  3. Assemble the Roll Base: Lay one sheet of roasted seaweed shiny side down on a bamboo sushi rolling mat. Spread about 1 cup of the seasoned sushi rice evenly over the seaweed, leaving approximately 1 inch of space at the top edge to seal the roll later.
  4. Add the Fillings: Scoop some of the crab mixture and shape it into a 1-inch wide log centered over the rice layer. Place avocado slices and cucumber sticks on top of the crab filling if using, ensuring even distribution for taste and texture balance.
  5. Roll the Sushi: Starting from the bottom edge closest to you, use the bamboo mat to roll the sushi firmly but gently, keeping the fillings tightly packed. When you reach the uncovered top edge of the seaweed, lightly wet it with a bit of water to help seal the roll closed. Continue rolling until sealed and place the roll seam-side down to keep it intact.
  6. Slice the Roll: Wet a sharp knife with water to prevent sticking, then carefully slice the sushi roll into bite-sized pieces, cleaning the knife with water between cuts if needed to maintain clean edges.
