Ingredients
Base Ingredients
- 4 tablespoons unsalted butter
- 1 medium yellow onion, diced
- 1 medium green bell pepper, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
Protein and Vegetables
- 1 pound andouille sausage or smoked sausage, sliced
- 2 pounds russet potatoes, peeled and diced into ½-inch cubes
Liquids and Seasoning
- 4 cups chicken broth (low sodium or no sodium added)
- 1 cup heavy cream or half-and-half
- 2 tablespoons all-purpose flour
- 1 teaspoon Worcestershire sauce
- 2 tablespoons Cajun seasoning (adjust to taste)
Garnishes (optional)
- Fresh parsley, chopped
- Chopped green onions
- Shredded cheddar cheese
- Crumbled bacon
Instructions
- Sauté the Aromatics: In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion, green bell pepper, and celery. Cook for 5-7 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
- Cook the Sausage: Add the sliced andouille or smoked sausage to the pot. Cook for about 5 minutes until browned and flavorful.
- Add Flour and Seasoning: Sprinkle the all-purpose flour over the sausage and vegetables. Stir continuously for 2 minutes to cook out the raw flour taste. Then mix in the Cajun seasoning thoroughly.
- Add Potatoes and Broth: Stir in the diced potatoes and pour in the chicken broth, scraping the bottom of the pot to release any browned bits. Bring soup to a boil, then lower heat to a simmer. Cover and cook for 20-25 minutes until potatoes are tender.
- Blend for Creaminess (Optional): For a smoother texture, use an immersion blender to puree part of the soup directly in the pot, or remove 2 cups, blend until smooth, and return it carefully to the pot.
- Add Cream and Final Touches: Stir in the heavy cream or half-and-half and Worcestershire sauce. Taste and adjust seasoning with more Cajun seasoning or salt if needed. Simmer uncovered for another 5 minutes.
- Serve: Ladle the hot soup into bowls. Garnish with chopped green onions, shredded cheddar cheese, crumbled bacon, and fresh parsley as desired.
Notes
- For a vegetarian version, omit sausage and use vegetable broth.
- Adjust Cajun seasoning based on your spice preference.
- Use half-and-half instead of heavy cream for a lighter soup.
- Be cautious when blending hot liquids to avoid splatters.
- This soup can be refrigerated for up to 3 days and reheated gently.
