This hearty Cajun Potato Salad combines creamy mashed potatoes and eggs seasoned with zesty Creole spices, yellow mustard, and sweet relish for a flavorful twist on a classic side dish. Boiled potatoes and eggs are mashed together and mixed with crunchy diced onions, making it perfect for gatherings or as a delicious accompaniment to grilled meats.
Ingredients
Potatoes & Eggs
- 5 Pounds Russet Potatoes, peeled and cut into 2″ chunks
- Salt to taste
- 8 Large Eggs
Salad Dressing & Seasonings
- 1 Cup Mayonnaise
- 1 Tablespoon Yellow Mustard
- 3 Tablespoons Sweet Relish
- 1 Yellow Onion, finely diced
- 1/2 Tablespoon Creole Seasoning, plus more for sprinkling
- 1/2 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
Garnish
- 1 Green Onion, chopped (optional)
Instructions
- Boil Potatoes and Prepare Water: In a large pot, add the peeled and cubed potatoes along with water and salt. Bring the water to a boil to start cooking the potatoes.
- Boil Eggs: Carefully add eggs to the boiling water and continue to boil for 10 minutes. Afterwards, remove the eggs and place them in cold water before peeling.
- Cook Potatoes Until Tender: Keep boiling the potatoes for approximately 10 more minutes until they become soft and easily pierced with a fork.
- Drain and Combine Ingredients: Drain the potatoes in a colander and then add the peeled eggs back into the pot with the drained potatoes.
- Mash Potatoes and Eggs: Using a masher or spoon, thoroughly mash the potatoes and eggs together in the same pot until well combined.
- Add Mayonnaise, Mustard, and Seasonings: Mix in mayonnaise, yellow mustard, creole seasoning, garlic powder, and onion powder. Stir well until all ingredients are evenly incorporated.
- Separate Kid-Friendly Portion (Optional): If making a portion without onions and relish for children, remove that portion now before adding additional ingredients.
- Add Sweet Relish and Onions: To the remaining mashed potato mixture, add the sweet relish and finely diced yellow onion. Mix thoroughly to incorporate.
- Garnish and Serve: Transfer the potato salad to a serving bowl, sprinkle additional Creole seasoning over the top, and garnish with chopped green onion if desired.
