Instructions
- Crush Cadbury Mini Eggs: Place the Cadbury mini eggs in a zip-top bag and gently break them into smaller pieces using a mallet, rolling pin, or the bottom of a sturdy cup. Keep some pieces larger by breaking only in half. Set aside.
- Prepare Oven and Baking Sheets: Preheat your oven to 350°F (175°C). Line cookie sheet trays with parchment paper or silicone baking mats. Set aside.
- Mix Dry Ingredients: In a large bowl, stir together the all-purpose flour, salt, and baking soda. Set aside.
- Cream Butter and Sugars: Using a stand mixer fitted with a paddle attachment, beat the unsalted butter, light brown sugar, and granulated sugar until the mixture is light and fluffy. Add the eggs and vanilla extract, mixing well and scraping down the bowl to ensure even incorporation.

- Top Cookies: Press the remaining ½ cup of crushed Cadbury mini egg pieces generously onto the tops of the cookie dough balls, maintaining a rounded shape.
