Ingredients

Meat and Aromatics

  • 2 teaspoons olive oil
  • 1 pound ground beef (90% lean)
  • 1 onion, finely diced

  • 4 cups coarsely chopped green cabbage
  • 2 carrots, peeled, quartered, and sliced
  • 1/2 cup uncooked long grain rice

Liquids and Seasonings

  • 4 cups beef broth
  • 3 (8 ounce) cans tomato sauce
  • 1 bay leaf
  • 3 tablespoons brown sugar
  • 2 tablespoons parsley (fresh or dried)


Instructions

  1. Heat the oil and brown the beef: In a large pot over medium-high heat, warm 2 teaspoons of olive oil. Add 1 pound of ground beef and season with salt and pepper. Cook, breaking up the meat with a spatula, until browned, about 4-5 minutes.
  2. Sauté onion and garlic: Add the finely diced onion and 2 teaspoons of minced garlic to the beef. Cook together for 2-3 minutes until the onion is softened and fragrant.
  3. Add vegetables and liquids: Stir in 4 cups of coarsely chopped green cabbage, 2 peeled and sliced carrots, 4 cups beef broth, 3 cans (8 ounces each) of tomato sauce, 1/2 cup uncooked long grain rice, 1 bay leaf, and 3 tablespoons brown sugar. Season again with salt and pepper to taste.
  4. Simmer the soup: Bring the mixture to a simmer. Reduce heat if necessary and cook uncovered for about 25 minutes, until the rice is tender and flavors meld.
  5. Finish and serve: Remove and discard the bay leaf. Sprinkle the soup with 2 tablespoons of parsley for a fresh finish. Serve hot.

  • You can substitute ground turkey for ground beef for a leaner version.
