Ingredients

Rice

  • 1.5 cups uncooked rice (to yield about 4 cups cooked rice)
  • 2.5 cups water

Protein

  • 1 lb. ground turkey or beef
  • 1 packet taco seasoning (or approximately 2 tablespoons)
  • 1/2 cup water (for taco meat simmer)

Vegetables & Beans

  • 1 cup frozen corn kernels
  • 1 (15 oz) can black beans, rinsed and drained
  • 2 green onions, thinly sliced

Dairy & Condiments

  • 4 oz. shredded cheese (about 1 cup)
  • 1 1/3 cups salsa


Instructions

  1. Cook the rice: Prepare the rice according to package instructions. For about 4 cups of cooked white rice, combine 1.5 cups uncooked rice with 2.5 cups water and cook until tender. This process allows time to prepare other ingredients simultaneously.
  2. Cook the meat: While the rice is cooking, heat a skillet over medium heat. Add the ground turkey or beef and cook until no longer pink, breaking it apart as it cooks. Add a small amount of oil if your meat is very lean to prevent sticking.
  3. Season the meat: Once cooked through, stir in the taco seasoning and 1/2 cup water. Simmer over medium-low heat for about 5 minutes until the liquid reduces to a flavorful saucy consistency. Then turn off the heat and set aside.
  4. Prepare the toppings: Thaw the frozen corn kernels. Rinse and drain the black beans thoroughly. Shred the cheese if not pre-shredded and thinly slice the green onions.
  5. Assemble the bowls: Fluff the cooked rice with a fork and evenly divide it among four meal prep containers. Portion the taco meat, corn, black beans, cheese, salsa, and green onions evenly over the rice in each container.
