Ingredients
Chicken
- ½ lb chicken breasts, cubed (or 2 cups rotisserie chicken)
- ¼ tsp salt
- ¼ tsp pepper
- ½ tsp dried oregano
- 1 tsp olive oil (to cook chicken)
Flatbread Toppings
- 2 naan or flatbread
- ⅓ cup buffalo sauce
- 2 garlic cloves, minced
- 1 small green bell pepper, chopped
- ¼ cup red onion, thinly sliced
- ⅓ cup mozzarella cheese
Garnish
- 2 Tbsp green onions, chopped
- 2 Tbsp fresh cilantro
- 4 Tbsp ranch dressing
Instructions
- Cook the Chicken: Pat the chicken dry if using raw chicken breasts. Cut into small bite-sized pieces. Heat 1 tsp olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and dried oregano. Cook the chicken for 14 to 16 minutes, stirring occasionally, until fully cooked and no longer pink inside. If using rotisserie chicken, skip this step.
- Prepare Flatbread with Toppings: Preheat the oven to 375ºF (190ºC). Place the naan or flatbread on a baking sheet. Spread an even layer of buffalo sauce over the flatbread using the back of a spoon or a brush. Sprinkle minced garlic evenly over the buffalo sauce. Top with shredded mozzarella cheese, chopped green bell pepper, thinly sliced red onion, and the cooked or rotisserie chicken.
- Bake the Flatbread: Place the baking sheet on the center rack of the preheated oven. Bake for 10 to 15 minutes or until the flatbread edges are golden brown and the cheese is melted and bubbling.
- Garnish and Serve: Remove the flatbread from the oven and let it cool slightly. Sprinkle with chopped green onions and fresh cilantro. Drizzle ranch dressing and additional buffalo sauce if desired. Slice and serve warm.
