Instructions

Add mayonnaise, hot sauce, and minced garlic, then whisk until smooth and well combined. Stir in shredded chicken, 1½ cups of the Pepper Jack cheese, 6 tablespoons of the blue cheese if using, and the finely chopped scallions until evenly mixed.
  3. Assemble and bake: Transfer the mixture into a 1½-quart (1.5-liter) baking dish. Sprinkle the remaining ½ cup of Pepper Jack cheese and 2 tablespoons of blue cheese over the top of the mixture. Place the dish in the oven and bake for approximately 20 minutes, until the dip is bubbling around the edges.
