Ingredients
Main Ingredients
- 1 cup quinoa
- 3 cups cauliflower florets
Wet Ingredients and Toppings
- 1.5 cups almond milk
- ½ cup vegan unsweetened yogurt (preferably coconut)
- ½ cup buffalo sauce
- 1 cup vegan shredded cheese (optional)
Instructions
- Preheat the oven: Set your oven to 375ºF (190ºC) and allow it to preheat fully to ensure even baking of the casserole.
- Prepare the baking dish: Take a 10.5 x 7.5 inch baking dish and add in the quinoa and cauliflower florets, spreading them evenly across the bottom of the dish.
- Mix wet ingredients: In a separate bowl, beat together almond milk, vegan unsweetened yogurt, and buffalo sauce until well combined, forming a creamy, spicy mixture.
- Combine and assemble: Pour the wet mixture over the quinoa and cauliflower in the baking dish. Stir gently to ensure all ingredients are evenly coated. If you prefer, sprinkle the vegan shredded cheese on top to add a cheesy texture.
- Bake the casserole: Place the casserole on the center rack of the oven and bake for about 45 minutes, or until the quinoa is fully cooked and most of the liquid has been absorbed.
- Serve and garnish: Once baked, serve the casserole immediately. Optionally, top with nutritional yeast and an extra drizzle of buffalo sauce for enhanced flavor.
