Instructions

  2. Prepare the Batter: In a large bowl, whisk together cornstarch, all-purpose flour, salt, garlic powder, and onion powder until evenly combined. Add the milk and 2 teaspoons of hot sauce and whisk until the batter is smooth and has a consistency similar to pancake batter.
  3. Coat the Cauliflower: Add the cauliflower florets to the batter bowl and toss thoroughly to coat each piece evenly with the batter.
  4. Heat the Oil: In a large nonstick or cast iron skillet, pour enough vegetable oil to cover about 1/8 inch of the pan surface. Heat the oil over medium-high heat until it is hot and shimmering.
  5. Fry the Cauliflower: Working in batches to avoid overcrowding, carefully place the battered cauliflower florets in a single layer in the hot oil. Cook for 5 to 7 minutes, turning every couple of minutes to brown all sides evenly. Adjust heat as needed to prevent burning. Use additional oil if necessary between batches. After frying, remove the cauliflower to a plate lined with paper towels to drain excess oil.
