Ingredients
Base
- 1⅓ cups almond flour
- 1 cup peanut butter

- 1 tsp coconut oil

- Prepare Peanut Butter Base: In a large bowl, thoroughly mix the almond flour, maple syrup, 1 cup peanut butter, and vanilla extract. It will require patience to fully incorporate the peanut butter into the flour, forming a uniform mixture.
- Press and Freeze Base: Line an 8×6 inch (or similar) loaf pan with parchment paper. Transfer the peanut butter mixture into the pan and press it down evenly with your hands to form a flat layer. Freeze this base for 30-40 minutes until firm.
- Melt Chocolate Mixture: While the base chills, combine the chocolate chips and 1 tsp coconut oil in a medium microwave-safe bowl. Microwave at medium power for about 2 minutes, stirring after the first minute to ensure smooth melting. Continue microwaving until the chocolate is fully melted and silky.
- Assemble and Chill: Pour the melted chocolate over the chilled peanut butter base, spreading it evenly with a spoon or spatula. Sprinkle the coarse sea salt on top. Place the assembled bars in the fridge or freezer for about 30 minutes to let the chocolate harden.
- Slice and Store: Once the chocolate topping is set, remove the bars from the fridge or freezer. Lift them out using the parchment paper and let them sit at room temperature for 5 minutes. Carefully slice into squares with a sharp knife. Store the bars in an airtight container in the refrigerator for up to 7 days or freeze for up to 3 months.
