Ingredients
Brownie Batter
- 1 1/4 cups unsalted butter
- 2 1/4 cups granulated sugar
- 1 1/2 cups unsweetened cocoa powder (natural or Dutch-processed)
- 1 tablespoon water
- 2 teaspoons vanilla extract
- 3/4 teaspoon salt
- 4 eggs (cold)
- 2/3 cup all-purpose flour
- 1 3/4 cups walnuts (finely chopped, optional)
Chocolate Lava Center
- 1 cup bittersweet or semi-sweet chocolate chips
Finishing Touches
- 1/4 cup confectioner’s sugar (for dusting, optional)
Instructions
- Preheat and Prepare Pans: Preheat your oven to 325 degrees F (163 degrees C). Generously butter and flour a nonstick muffin tin or line the cups with large cupcake papers to prevent sticking.
- Bake Browned Butter: Melt the unsalted butter in a large saucepan over medium-low heat, swirling occasionally, until it begins to brown and emit a nutty aroma, about 8 minutes. Remove from heat immediately to avoid burning.
- Mix Wet Ingredients: While still warm, stir the granulated sugar, cocoa powder, water, vanilla extract, and salt into the browned butter. Allow this mixture to cool slightly for 5 minutes to prevent cooking the eggs in the next step.
- Add Eggs and Flour: Add the cold eggs one at a time, whisking vigorously after each addition to fully incorporate. Then add the all-purpose flour and mix vigorously for about 1 minute to achieve a smooth batter.
- Incorporate Walnuts: If using, stir in the finely chopped walnuts to add texture and flavor to the batter.
- Fill Muffin Cups: Spoon the batter evenly into the prepared muffin tin, filling almost to the top as these cakes do not rise much. Press several chocolate chips into the center of each brownie to create the molten lava center.
- Bake: Bake the brownies for 15 to 20 minutes until the edges are set but the centers remain slightly gooey. You can check doneness by cutting into one brownie with a paring knife to ensure the batter is set but soft in the middle.
- Cool and Serve: Allow the brownie lava cakes to cool in the pan for 10 minutes before carefully removing them. Dust with confectioner’s sugar if desired and serve immediately, optionally with a scoop of ice cream for a classic pairing.
- Storage: Store any leftovers in a resealable bag at room temperature for up to 3 days or freeze for a few months for longer storage.
Notes
- To ensure a beautiful molten center, do not overbake; check the texture towards the end of baking time.
- Use cold eggs to help maintain batter consistency and prevent premature cooking during mixing.
- Optionally add chopped walnuts for added crunch or leave them out for a purely chocolate experience.
- Butter and flour or use cupcake liners to avoid the brownies sticking to the pan.
- Serve warm for best texture, with optional dusting of confectioner’s sugar and ice cream.
- Brown the butter carefully to avoid burning which can impart bitterness.
