Description

These Broccoli Breakfast Bars are a delicious low-carb morning option packed with protein and vegetables. Combining eggs, cottage cheese, and sharp cheddar with micro-chopped broccoli and crispy bacon, these savory bars bake to a golden perfection, making them perfect for meal prep or a hearty breakfast on the go.

Ingredients

Main Ingredients

  • 12 eggs
  • 1 heaping cup cottage cheese
  • 2 tablespoons olive oil
  • 1 lb broccoli (micro chopped, about 4 cups)
  • 1 cup shredded sharp cheddar cheese
  • 2 scallions (finely chopped)
  • 5 slices bacon (cooked and crumbled)
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian herb blend
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese (for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a 9×13 inch baking dish with parchment paper to prevent sticking and make cleanup easier.
  2. Mix Ingredients: In a large bowl, whisk the eggs for about one to two minutes until slightly frothy. Add the cottage cheese, olive oil, micro chopped broccoli, 1 cup shredded sharp cheddar, finely chopped scallions, crumbled bacon, grated parmesan, garlic powder, onion powder, Italian herb blend, and salt and pepper. Mix everything thoroughly to combine all ingredients evenly.
  3. Prepare to Bake: Pour the mixture into the lined baking dish and spread it out evenly to fill the pan. Sprinkle the remaining 1 cup of shredded sharp cheddar cheese evenly over the top for a cheesy crust.
  4. Bake: Place the dish in the oven and bake for about 50 minutes, or until the top is golden brown and the bars are set in the middle.
  5. Cool and Serve: Remove from the oven and allow to cool for 15 minutes before slicing into 8 bars. This rest time helps the bars firm up for easy handling and serving.

Notes

  • Micro chopping the broccoli ensures even distribution throughout the bars and helps them cook evenly.
  • Cooking the bacon ahead and letting it cool before adding prevents excess grease in the bars.
  • Letting the bars cool before slicing helps maintain their shape when served.
  • These bars can be stored in the refrigerator for up to 4 days or frozen for up to 1 month.
  • Feel free to customize with different cheeses or herbs according to your taste preferences.
