Description

This Brioche French Toast recipe transforms slightly stale brioche bread into a rich, custardy breakfast treat. The bread slices are soaked briefly in a creamy mixture of eggs, whole milk, vanilla, cinnamon, and maple syrup before being pan-fried to golden perfection. Serve with your favorite toppings such as maple syrup, whipped cream, fresh berries, or fruit sauces for a luxurious morning meal.

Ingredients

Main Ingredients

  • 1 loaf (about 14–16 ounces/400–450g) store-bought or homemade brioche (slightly stale)
  • 4 large eggs
  • 1 cup (240g/ml) whole milk
  • 1 Tablespoon maple syrup, brown sugar, or granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon–1/2 teaspoon ground cinnamon
  • 1–2 Tablespoons (14–28g) unsalted butter, for cooking

Toppings (optional)

  • Cinnamon butter or honey butter
  • Maple syrup
  • Confectioners’ sugar
  • Whipped cream
  • Fresh berries
  • Raspberry sauce, blueberry sauce, or strawberry sauce topping

Instructions

  1. Slice the brioche: Slice the brioche into 1-inch-thick slices and set aside to prepare for soaking.
  2. Prepare the egg mixture: In a medium bowl with a pour spout, whisk together the eggs, whole milk, maple syrup (or brown sugar or granulated sugar), vanilla extract, and ground cinnamon until fully combined into a creamy mixture. Pour this into a shallow dish like a pie plate or baking pan for dipping.
  3. Dip the brioche slices: Dip each slice of brioche into the egg mixture for about 5–10 seconds per side to coat both sides without over-soaking, as brioche absorbs liquid quickly.
  4. Cook the French toast: Melt 1 tablespoon of unsalted butter in a large skillet over medium-low heat. Working in batches and without overcrowding, place the soaked brioche slices in the skillet. Cook for about 3–4 minutes on one side until golden brown and the bread releases easily from the pan. Flip and cook for another 2–3 minutes until golden on the other side with a soft, custardy center. Add more butter between batches as needed and reduce heat if browning too quickly.
  5. Keep warm if needed: If cooking in batches, keep finished slices warm on a baking sheet in a 200°F (95°C) oven until all slices are cooked and ready to serve.
  6. Serve with toppings: Serve immediately with your favorite toppings such as maple syrup, a dusting of confectioners’ sugar, fresh berries, whipped cream, cinnamon butter, or fruit sauces like raspberry, blueberry, or strawberry.

Notes

  • Use slightly stale brioche for best absorption without falling apart.
  • Do not soak the brioche slices too long to prevent sogginess.
  • Adjust cooking heat as necessary to prevent burning and ensure a custardy interior.
  • Keep cooked French toast warm in a low oven if preparing in multiple batches.
  • Feel free to customize with preferred toppings to enhance flavor.
