Instructions
- Whisk Eggs: In a bowl, whisk together 2 eggs and 1/4 teaspoon kosher salt for about 30 seconds until fully combined and slightly frothy.
- Heat Pan: Place 1 teaspoon of oil in a 9-inch skillet over medium heat, coating the bottom evenly. Use a pan slightly larger than your tortilla for best results.
- Cook Omelette Base: Pour the whisked eggs into the pan, tilting it to spread the eggs evenly across the surface, creating a thin omelette layer.
- Loosen Edges: After about 30 seconds, gently run a spatula along the edges of the omelette to loosen it from the pan without folding or breaking it.
- Add Cheese and First Tortilla: Sprinkle half the cheese evenly over the omelette, then place one tortilla on top of the egg and cheese. Carefully flip the entire assembly onto a plate so the tortilla side is down.
