Wet Ingredients
- 1 ¾ cups Milk (whole milk preferred)
- 2 large Eggs
- ¼ cup Unsalted butter, melted
- 1 teaspoon Vanilla extract
Optional Mix-ins

Instructions
- Prepare Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Mix Wet Ingredients: In a separate bowl, beat the eggs and then add the milk, melted unsalted butter, and vanilla extract. Whisk until smooth.
- Combine Wet and Dry: Pour the wet ingredients into the bowl with the dry ingredients. Gently stir with a silicone spatula until just combined; do not overmix to keep the batter fluffy.
- Add Mix-ins: Fold in your choice of optional mix-ins like blueberries, chocolate chips, bananas, or strawberries evenly throughout the batter.
- Scoop Batter: Grease a mini muffin tin and use a cookie scoop to evenly distribute the batter into each cavity, filling about ¾ full.
- Bake: Preheat your oven to 375°F (190°C) and bake the pancake poppers for 12–15 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Cool: Let the pancake poppers cool in the muffin tin for 5 minutes to set before carefully removing them.
- Serve: Serve warm with maple syrup, powdered sugar, or your favorite breakfast toppings.
