Description

A delightful and elegantly simple dessert, Brandied Blackberry Fool combines fresh blackberries pureed with a splash of blackberry brandy and lemon juice, folded into luxuriously whipped cream with confectioner’s sugar and vanilla. This creamy treat is perfect for quick preparation and bursts with fresh berry flavor accented by aromatic brandy and a hint of vanilla, making it an ideal dessert for any occasion.

Ingredients

Berry Puree

  • 2 cups fresh blackberries
  • 1 Tbsp blackberry brandy
  • 1 tsp lemon juice

Whipped Cream Mixture

  • 1 cup heavy whipping cream
  • 1 Tbsp confectioner’s sugar
  • 1/2 tsp vanilla extract

Garnish

  • Mint leaves
  • Whole blackberries

Instructions

  1. Prepare the Blackberry Puree: In a food processor, puree the fresh blackberries, blackberry brandy, and lemon juice until completely smooth. Push the puree through a fine mesh strainer using the back of a spoon to extract as much of the mixture as possible while discarding the seeds for a silky texture.
  2. Whip the Cream: Whip the heavy cream until it starts to thicken. Add the confectioner’s sugar and vanilla extract, then continue whipping until stiff peaks form. This ensures the cream is firm enough to hold the berry puree without breaking down, but avoid overwhipping to prevent turning it into butter.
  3. Fold in the Puree: Gently fold a portion of the berry puree into the whipped cream using a silicone spatula. Fold just enough to create beautiful streaks of purple and white, maintaining a marbled effect. You can choose to serve the mixture in one bowl or layer it in smaller serving dishes for presentation, adding fresh blackberries and additional puree if desired.
  4. Chill Before Serving: Refrigerate the assembled fool for up to a few hours before serving to allow the flavors to meld and the dessert to set slightly.

Notes

  • For best flavor, use fresh, ripe blackberries.
  • The brandy enhances the berry flavor but can be omitted or substituted with a berry liqueur if preferred.
  • Do not overwhip the cream to avoid it turning into butter.
  • The dessert can be prepared a few hours in advance and kept chilled to save time.
  • For a lighter version, use reduced-fat cream and adjust sugar accordingly.
