Ingredients

Vegetables and Fruit

  • 2 lbs red cabbage (about 6-8 cups shredded)
  • 1 yellow onion, finely diced
  • 1 granny smith apple, thinly sliced

Liquids and Fats

  • 2 Tbsp butter
  • 1/4 cup apple cider vinegar
  • 1/4 cup water (plus more as needed)

Seasonings

  • 1/2 tsp salt
  • Freshly cracked pepper, to taste


Instructions

  1. Sauté the onion: Heat a large pot over medium to medium-low heat. Add the butter and diced onion to the pot. Cook for about 5 minutes, stirring occasionally, until the onions become soft and transparent.
  2. Prepare and add cabbage, apple, and liquids: While the onions are cooking, finely shred the red cabbage and thinly slice the apple. Add the shredded cabbage, sliced apple, apple cider vinegar, water, and salt to the pot. Stir to combine.
  3. Braise the cabbage: Increase the heat to medium and cover the pot with a lid. Let the cabbage cook for 20-30 minutes, stirring occasionally, until it becomes very tender. If the bottom of the pot starts to dry out during cooking, add another 1/4 cup of water to maintain moisture.
  4. Season and serve: Taste the braised cabbage and season with freshly cracked pepper and additional salt or vinegar if desired. Serve warm as a flavorful side dish.
