It’s a simple, elegant side dish perfect for enhancing your meal with fresh, aromatic ingredients and a touch of citrus.
Ingredients
Vegetables
- 1 medium fennel bulb
- 1 medium crisp apple
Fats and Oils
- 1 teaspoon butter
- 1 teaspoon olive oil
Others
- 1 teaspoon granulated sugar
- 1/2 cup vegetable broth (125 ml / 4.2 fl.oz)
- 1 tablespoon lemon juice
- Fine sea salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare fennel: Cut off the fennel tops and bottoms. Reserve some of the fronds for garnish. Slice the fennel bulb in half lengthwise, then quarter each half, keeping some of the core intact to hold the pieces together.
- Prepare apples: Halve the apple, core it, and slice each half into about six pieces.
- Saute fennel: Heat the butter and olive oil in a large pan over medium heat. Add the fennel pieces and cook, stirring occasionally, until they start turning golden, approximately 4 minutes.
- Add apples: Add the apple slices to the pan and continue cooking for another 3 minutes until the apples are golden and tender, stirring occasionally.
- Caramelize sugar: Sprinkle the granulated sugar along with some sea salt over the fennel and apples. Stir gently for about 1 minute until the sugar caramelizes slightly, coating the ingredients.
- Cook fennel with broth: Pour in the vegetable broth, cover the pan with a lid, and let it cook on medium-low heat for 3 minutes to braise and soften the fennel and apples further.
- Adjust taste and reduce glaze: Remove the lid, stir in the lemon juice, and cook uncovered for an additional minute until the liquid reduces to form a glossy glaze. Season with salt and freshly ground black pepper to taste.
- Serve: Garnish with the reserved fennel fronds and serve immediately as a flavorful side dish.
Notes
- Use a crisp apple such as Granny Smith or Fuji for a balance of tartness and sweetness.
- Be careful not to overcook the fennel to keep some texture.
- The reserved fennel fronds add a lovely fresh, anise-like flavor and attractive garnish.
- This dish pairs well with roasted meats, fish, or as part of a vegetarian meal.
