Ingredients

Crust

  • 2 cups ground Cocoa Puffs™ Cereal (processed in a food processor)
  • 1/2 cup shamrock shaped sprinkles
  • 2 tablespoons granulated sugar
  • 8 tablespoons unsalted butter, melted

Cheesecake Filling

  • 6 tablespoons crème de menthe liquor
  • 1 envelope unflavored gelatin
  • 2 1/2 cups heavy whipping cream, divided (1/2 cup for melting chocolate, 2 cups for whipping)
  • 10 oz white chocolate, chopped
  • 24 oz cream cheese, at room temperature
  • 1 cup granulated sugar
  • 3 drops green food coloring

Decoration

  • Whipped cream (spiked optionally with crème de menthe)
  • Extra shamrock sprinkles


Instructions

  1. Prepare the crust: Combine ground Cocoa Puffs cereal, shamrock sprinkles, and 2 tablespoons granulated sugar in a large bowl. Whisk together until the sprinkles are evenly dispersed. Add the melted butter and mix thoroughly until all crumbs are moistened.
  2. Form the crust: Press the crumb mixture tightly and evenly into the bottom and up the sides of an 8 or 9-inch springform pan. Set aside for now.
  3. Make gelatin mixture: In a large bowl, combine crème de menthe liquor and unflavored gelatin; let this sit for 2 minutes to bloom the gelatin.
  4. Melt chocolate and combine: Heat 1/2 cup heavy cream in a small saucepan until it simmers. Remove from heat and stir in chopped white chocolate until smooth. Add the gelatin mixture to the chocolate mixture and allow it to cool to room temperature.
  5. Mix cream cheese and sugar: Using an electric mixer or stand mixer, beat cream cheese and 1 cup granulated sugar together on medium speed until smooth and well combined.
  6. Combine mixtures: Slowly incorporate the cooled white chocolate and gelatin mixture into the cream cheese mixture, mixing gently. In a separate bowl, whip the remaining 2 cups of heavy cream at high speed until soft peaks form, then fold the whipped cream carefully into the white chocolate and cream cheese mix.
  7. Add color: Divide the cheesecake batter evenly in half. Add 3 drops of green food coloring to one half and mix until fully incorporated.
  8. Create layered cheesecake: Pour half of the white batter into the prepared crust and place in the freezer for 5 minutes to set the layer.
  9. Add second layer and swirl: Remove from freezer and add half of the green batter and then the remaining white batter on top. Use a knife to swirl the layers for a decorative effect. Freeze for another 5 minutes.
  10. Finish layering: Pour the remaining green batter on top and spread smoothly with a spatula. Cover the cheesecake and freeze overnight to firm up completely.
  11. Decorate: Before serving, top with whipped cream (optionally spiked with more crème de menthe) and sprinkle extra shamrock sprinkles for festive decoration.
