Instructions
- Prepare the patties: In a large bowl, combine the ground beef, beaten egg, Parmesan cheese, breadcrumbs, and grated garlic. Mix well until all ingredients are evenly incorporated. Shape the mixture into 4 oblong patties and season both sides with salt and pepper.
- Brown the patties: Heat 2 tablespoons of vegetable oil in a large skillet over high heat. Add the beef patties and cook for 3-4 minutes on each side until they reach medium rare. Remove the patties from the skillet and cover them with foil to keep warm while you prepare the gravy.
- Cook the mushrooms and onions: Reduce the heat to medium. Add the sliced mushrooms and onions to the same skillet and cook for 7-8 minutes, stirring occasionally, until the onions are soft and the mushrooms have released their moisture and cooked down.
- Make the gravy: Stir in 1 tablespoon of tomato paste, 1 cup of beef broth, and 1 teaspoon of Worcestershire sauce. Bring the mixture to a boil, then reduce to a simmer for 3-4 minutes until the sauce thickens slightly.
- Finish cooking patties in gravy: Pour in 2 tablespoons of half and half to enrich the sauce. Return the beef patties to the skillet, spooning some gravy over them. Cook for a few more minutes until the patties are cooked through to your desired doneness.
- Serve: Plate the Salisbury steaks and spoon the mushroom gravy over each. Garnish with freshly chopped parsley and serve hot.
