Ingredients

Blueberry Compote

  • 2 cups fresh blueberries, divided

  • 1 Tbsp water

Parfait Layers

  • 2/3 cup low-fat plain Greek yogurt
  • 1 cup cinnamon granola
  • 2/3 cup fresh blueberries


Instructions

  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine 2 cups of blueberries, granulated sugar, and water. Bring the mixture to a simmer, stirring frequently to prevent sticking.
  2. Cook the Compote: Continue cooking and stirring until the blueberries burst and the mixture thickens to a jam-like consistency, about 5 to 8 minutes. You should have approximately 1 cup of blueberry compote. Remove from heat.
  3. Chill the Compote: Transfer the compote to a bowl and refrigerate until fully cooled. Keep chilled until ready to assemble the parfaits to maintain freshness.
  4. Assemble the Parfaits: Using four 12-ounce serving cups, begin layering each parfait by spooning 1/3 cup of Greek yogurt into the bottom of each cup.
  5. Add Blueberry Compote and Granola Layers: Top the yogurt with 2 tablespoons of blueberry compote, followed by 2 tablespoons of cinnamon granola, and then 1 tablespoon of fresh blueberries.
  6. Repeat Layers: Repeat the layering of yogurt, blueberry compote, granola, and fresh blueberries once more to complete the parfaits.
  7. Serve Immediately: Serve the parfaits right away to keep the granola crunchy and enjoy the fresh texture and flavors.
