Description

Delicious and nutritious Blueberry Lemon Overnight Oats, perfect for a quick and easy breakfast. This recipe combines rolled oats, chia seeds, vanilla protein powder, lemon zest, Greek yogurt, and fresh blueberries soaked overnight in almond milk to create a creamy, flavorful, and wholesome meal that can be enjoyed straight from the jar or in a bowl.

Ingredients

Base Ingredients

  • ½ cup old fashioned rolled oats
  • 1 teaspoon chia seeds
  • 1 Tablespoon vanilla protein powder (I used Nuzest protein powder)
  • ½-1 teaspoon lemon zest
  • ¼ cup full fat plain Greek yogurt or vegan yogurt
  • ¾ cup non-dairy milk (I used almond milk)
  • pinch of salt
  • ½ teaspoon maple syrup
  • ¼ cup blueberries, plus more for topping

Toppings (optional)

  • Granola
  • Blueberries
  • Nut butter

Instructions

  1. Prep: Gather all the ingredients needed for the overnight oats.
  2. Mix Ingredients: Add oats, non-dairy milk, Greek yogurt, vanilla protein powder, maple syrup, chia seeds, blueberries, lemon zest, and a pinch of sea salt into a jar or storage container with a lid. Stir these ingredients together thoroughly to combine.
  3. Soak: Place the jar in the refrigerator and allow the oats to soak overnight for about 8 hours. Alternatively, if you’re short on time, soak for a minimum of 2 to 4 hours until the oats absorb the liquid and soften.
  4. Serve: The next morning or when ready to eat, remove the lid and stir the oats to mix. If the mixture is too thick, add a splash of extra non-dairy milk to loosen it. Add your favorite toppings such as granola, extra blueberries, or nut butter, then enjoy.
  5. Storage: Store any leftover overnight oats in a sealed airtight container in the fridge. They will keep fresh for up to 5 days.

Notes

  • You can customize this recipe with your choice of yogurt and non-dairy milk.
  • Lemon zest quantity can be adjusted based on your preference for citrus flavor.
  • Overnight oats can be eaten cold straight from the jar or warmed up if preferred.
  • Adding protein powder adds a healthy protein boost perfect for breakfast.
  • For a vegan option, use vegan yogurt and plant-based protein powder.
  • Make sure to use rolled oats for best texture; instant oats may become too mushy.
