Description

This Blood Orange Coffee Cake is a delightful twist on the classic coffee cake, featuring a rich cinnamon-cocoa streusel and a tangy blood orange glaze. Made with layers of moist cake infused with orange zest and yogurt, it’s perfect for breakfast or dessert and brings a bright citrus flavor balanced with warm spices and a touch of espresso.

Ingredients

Streusel

  • 1/2 cup packed light brown sugar
  • 1/2 cup all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter (cut into pieces)

Cake

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (softened to room temperature)
  • 1 1/2 cups sugar
  • 2 tablespoons freshly grated orange zest
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup plain Greek yogurt (full-fat or 2%)

Blood Orange Glaze

  • 1/4 cup freshly squeezed blood orange juice
  • 1/2 teaspoon vanilla extract
  • 3/4 cup powdered sugar

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees F. Thoroughly butter and flour a 10-inch bundt cake pan—this step is crucial to ensure the cake releases properly without breaking apart. Avoid using cooking spray for the best results.
  2. Make the Streusel: In a bowl, whisk together the brown sugar, flour, cinnamon, cocoa powder, espresso powder, and salt. Add the cold butter pieces, and using your hands, mix the butter into the flour mixture until it has the consistency of coarse sand with tiny butter pieces remaining.
  3. Prepare Cake Sugar Mixture: Combine the sugar with the freshly grated orange zest by rubbing it between your fingers until the zest is fully incorporated into the sugar, enhancing the flavor profile.
  4. Combine Dry Ingredients: In a separate small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  5. Cream Butter and Sugar: In the bowl of an electric mixer, beat the softened butter on medium speed until creamy. Gradually add the sugar and orange zest mixture, beating for 4 to 5 minutes until the mixture is fluffy and light in color. Scrape down the sides as needed to ensure even mixing.
  6. Add Eggs and Vanilla: Add eggs one at a time to the creamed mixture, beating well for about a minute after each addition. Then add the vanilla extract and beat well to combine.
  7. Incorporate Yogurt: Beat in the Greek yogurt, scraping down the bowl as needed to ensure everything is evenly combined.
  8. Add Dry Ingredients: Slowly add the dry ingredient mixture to the wet mixture on low speed. Beat just until the ingredients are incorporated, being careful not to overmix.
  9. Assemble the Cake: Spoon half of the batter into the prepared bundt pan. Sprinkle two-thirds of the streusel evenly over the batter. Add the remaining batter on top. Use a knife to gently swirl in the remaining streusel through the top layer of batter, creating a marbled effect.
  10. Bake: Bake in the preheated oven for 45 to 55 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean. The cake in this recipe needed the full 55 minutes and was perfectly baked.
  11. Cool: Remove the cake from the oven and let it cool in the pan for 10 minutes. Then invert the pan onto a wire rack and allow the cake to cool completely before moving it to avoid breaking.
  12. Make the Blood Orange Glaze: Whisk together the blood orange juice, vanilla extract, and powdered sugar until the glaze is smooth and well combined.
  13. Glaze and Serve: Drizzle the cooled cake with the blood orange glaze. Let the glaze set for about 30 minutes before slicing and serving.

Notes

  • Butter and flour the bundt pan thoroughly to prevent sticking; do not use cooking spray.
  • Use cold butter for the streusel to create a crumbly texture.
  • Rubbing the orange zest into the sugar releases the aromatic oils and enhances the flavor.
  • Do not overmix the batter after adding the dry ingredients to keep the cake tender.
  • The cake requires full baking time up to 55 minutes for a perfect texture.
  • Allow the cake to cool completely before glazing to prevent the glaze from melting off.
  • The blood orange glaze adds a tangy sweetness that perfectly complements the spiced cake.
