These Blackstone Salmon Bites are succulent, flavor-packed chunks of salmon cooked on a flat top griddle with a luscious garlic soy sauce and garlic butter. Paired with charred broccolini and fragrant basmati rice, this easy 30-minute recipe delivers a satisfying, restaurant-quality meal perfect for weeknight dinners.


Ingredients

Garlic Soy Sauce

  • 1/2 cup soy sauce (sub Tamari for gluten-free)
  • 2 tablespoons garlic paste
  • 1 tablespoon rice vinegar
  • 2 teaspoons garlic chili sauce
  • 1 teaspoon ginger paste
  • 1 teaspoon sesame oil

Garlic Butter

  • 2 tablespoons butter (room temperature)
  • 1 teaspoon garlic (minced)

Salmon and Seasoning

  • 1.5 pounds fresh salmon
  • 1 tablespoon extra virgin olive oil (sub avocado oil)
  • Kosher salt & ground black pepper
  • Soy sauce (sub tamari for gluten-free), for drizzling

Broccolini

  • 6-12 oz broccolini
  • 1-2 tablespoons olive oil (more for cooking)
  • 1 teaspoon kosher salt (more as desired)

Rice

  • 4 cups basmati rice (cooked*)


Instructions

  1. Make Garlic Soy Sauce: In a small bowl or mason jar, whisk together soy sauce, garlic paste, rice vinegar, garlic chili sauce, ginger paste, and sesame oil until well combined. Set aside.
  2. Prepare Garlic Butter: In another small bowl, combine room temperature butter with minced garlic. Mix well and set aside.
  3. Prep Salmon: Remove skin from the salmon if present, then cut the salmon into 1.5 to 2-inch chunks. Place in a large bowl, drizzle with 1 tablespoon extra virgin olive oil, and toss to coat evenly. Season with kosher salt and ground black pepper. Set aside to marinate slightly.
  4. Prep Broccolini: Trim the broccolini by breaking or cutting thicker stalks in half lengthwise. Place in a bowl or plate, drizzle with 1 to 2 tablespoons olive oil, and massage the oil into the broccolini. Season generously with kosher salt.
  5. Cook Salmon: Preheat a flat top griddle to medium-high heat. Add oil to one side of the griddle and spread around. Place the salmon chunks on the oiled area and cook for 1 minute. Drizzle some soy sauce over the salmon and cook another 1-2 minutes. Flip the salmon pieces, drizzle with more soy sauce, and cook 1-2 minutes more, until the internal temperature reaches 140°F. Add 1 tablespoon garlic butter to the griddle and allow it to melt. Toss the salmon in the melted butter, then drizzle with some of the garlic soy sauce (reserving most for later). Remove salmon to a plate.
  6. Cook Broccolini: While cooking salmon, add a drizzle of olive oil to the other side of the griddle and spread it around. Add the broccolini and cook, flipping and tossing for about 3-4 minutes, until the broccolini begins to char slightly. Transfer to a plate when done.
  7. Assemble Bowls: Divide cooked basmati rice evenly among serving bowls. Top each bowl with broccolini and salmon bites. Pour the remaining garlic soy sauce over everything and serve immediately for best flavor and texture.

  • For a gluten-free version, substitute soy sauce with tamari.
  • Salmon should be cooked to an internal temperature of 140°F for safety and optimal texture.
