- ½ tsp onion powder
- ½ tsp freshly ground black pepper
- ½ tsp dried oregano
- ¼ tsp salt
Coconut Rice
- 1½ cups long grain white rice
- 1 (14 oz) can coconut milk
- 1¼ cups water
- 1-2 Tbsp white granulated sugar (optional)
Cilantro-Lime Dressing
- 1 cup fresh cilantro
- ¼ cup olive oil
- ¼ cup fresh lime juice (about 2 limes)
- 1½ tsp maple syrup (or honey)
- 2 cloves garlic
- ½ tsp salt
Toppings (optional)
- ½ cup shredded red cabbage
- ⅓ cup chopped pineapple
- 1 sliced avocado
Instructions
- Prepare the Chicken and Oven: Preheat the oven to 375ºF. In a small bowl, whisk together smoked paprika, cayenne pepper, dried thyme, garlic powder, onion powder, black pepper, dried oregano, and salt to create the spice mix. Pat the chicken breasts dry with paper towels; if large, cut them in half to ensure even cooking.
