Ingredients
Vegetable Filling
- 1 tablespoon cooking oil (like olive oil)
- ½ medium yellow onion, peeled and chopped
- 1 medium zucchini, chopped
- 3 cloves garlic, minced
- ¼ teaspoon salt, or to taste
- 1 tablespoon tomato paste
- 1 (4-ounce) can green chiles
- 1 (15-ounce) can black beans, drained and rinsed
Assembly and Toppings
- 1 (10-ounce) can enchilada sauce
- 6 taco-sized soft tortillas
- Vegan cheese (optional)
- Optional toppings: vegan sour cream, cilantro, or parsley
Instructions
- Prepare the Vegetable Filling: Heat the cooking oil in a medium pot over medium heat. Add the chopped onion and zucchini, sautéing until the onion becomes translucent and the zucchini is tender, approximately 5 to 10 minutes. Then add the minced garlic and sauté for an additional 2 minutes until fragrant.
- Combine the Filling Ingredients: Stir in the green chiles, black beans, tomato paste, and salt. Heat the mixture until warm, then taste and adjust the salt to your preference.
- Preheat Oven: Set the oven to 350°F (175°C) to prepare for baking the enchiladas.
- Prepare the Baking Dish: Pour about ¼ cup of enchilada sauce into the bottom of a 9×13 inch baking dish and spread it evenly to prevent sticking and add flavor.
- Assemble Enchiladas: Spoon approximately ⅓ to ½ cup of the black bean filling into each tortilla, then roll them up. Place the filled tortillas seam side down in the baking dish. Pour the remaining enchilada sauce evenly over the top. Add vegan cheese on top if desired.
- Bake: Bake the enchiladas in the preheated oven for 20 minutes, until heated through and the cheese (if used) is melted.
- Serve: Serve warm, garnished with optional toppings such as vegan sour cream, cilantro, or parsley to enhance flavor and presentation.
Notes
- You can use regular cheese instead of vegan cheese if not following a vegan diet.
- Feel free to add other vegetables like bell peppers or corn to the filling for extra texture and flavor.
- Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
- For a spicier dish, add extra green chiles or some chopped jalapeños to the filling.
- If you prefer a gluten-free version, substitute the tortillas with gluten-free tortillas.
