Ingredients
Ingredients
- 1 Tbsp olive oil
- 1 yellow onion, diced
- 4 cloves garlic, minced
- ½ lb. ground beef
- 3 (15oz) cans black beans, drained
- 1 (10oz) can diced tomatoes with green chiles
- 1 (6oz) can tomato paste
- 1 Tbsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp salt (plus more to taste)
- 2 cups water
Instructions
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking for 2-3 minutes until the onions are softened and fragrant.
- Cook Ground Beef: Add the ground beef to the pot. Continue to cook and stir for 5-7 minutes until the beef is fully cooked through and no longer pink.
- Add Remaining Ingredients: Stir in the drained black beans, diced tomatoes with juices, tomato paste, chili powder, cumin, smoked paprika, oregano, and water. Mix everything thoroughly to combine.
- Simmer Chili: Place a lid on the pot and bring the mixture to a simmer. Let it simmer gently for about 15 minutes, stirring occasionally to blend flavors and slightly thicken the chili.
- Season and Serve: Taste the chili and add salt as needed, depending on the saltiness of the canned ingredients. Serve hot with your favorite chili toppings such as cheese, sour cream, or green onions, and enjoy!
Notes
- Drain the black beans to prevent the chili from becoming too watery.
- Diced tomatoes with green chiles add a slight kick, but you can use plain diced tomatoes if preferred.
- Adjust the chili powder and spices to your heat preference.
- This chili can be made vegetarian by omitting the ground beef and adding extra beans or vegetables.
- Leftovers store well in the refrigerator for up to 4 days and reheat beautifully.
