Instructions
- Prepare Cookie Crumbs: Pulverize the Biscoff cookies in a food processor or by hand until very finely ground to ensure a smooth truffle texture.
- Cream Cheese and Cookie Butter Mix: In a stand mixer fitted with the paddle attachment, cream together the room temperature cream cheese and 1 cup of cookie butter until the mixture is smooth and well combined.
- Combine Dry Ingredients: Scrape down the sides of the bowl, then add the ground cookie crumbs and ground cinnamon. Mix on low speed until fully incorporated, even if the mixture appears slightly crumbly.
