Ingredients
Cookie Dough Ingredients
- 3/4 cup butter, softened
- 1 cup sugar, plus additional for rolling
- 1 large egg, room temperature
- 1/4 cup molasses
- 2-1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
Instructions
- Create the dough: In a large bowl, use a hand mixer or stand mixer to cream the softened butter and 1 cup of sugar together until the mixture becomes light and fluffy, which should take about five to seven minutes. Then, beat in the room-temperature egg followed by the molasses, mixing thoroughly.
- Mix dry ingredients: In a separate bowl, whisk together the all-purpose flour, ground ginger, baking soda, ground cinnamon, ground cloves, and salt to combine all the dry spices evenly.
- Combine mixtures: Gradually add the dry flour mixture to the creamed wet ingredients. Beat the mixture well until a uniform cookie dough forms, ensuring even distribution of all ingredients.
- Shape cookies and coat in sugar: Roll the cookie dough into 1-1/2 inch balls. Then, roll each ball in a small bowl filled with additional sugar to coat the exterior. Place the sugar-coated dough balls onto ungreased baking sheets, spacing them about 2 inches apart. For consistent size and ease, use a cookie scoop if available.
- Bake the cookies: Preheat the oven to 350°F (175°C). Bake the cookies for 10 to 12 minutes or until they are puffy and lightly browned. Remove the baking sheets from the oven and transfer the cookies to wire racks to cool completely to room temperature.
Notes
- Using room-temperature egg helps the dough combine smoothly.
- Rolling the dough balls in sugar before baking gives a nice crunchy exterior texture.
- Spacing cookies 2 inches apart prevents them from spreading into each other while baking.
- You can substitute molasses with dark corn syrup if unavailable, but molasses gives the characteristic rich flavor.
- Store cookies in an airtight container to maintain softness for up to a week.
