Ingredients

Rice

  • 4 cups cooked jasmine rice

Spinach

  • 1/2 Tbsp cooking oil
  • 6 cups fresh spinach, loosely packed
  • 1 tsp toasted sesame oil
  • Pinch of salt

Beef and Sauce

  • 1/2 lb ground beef
  • 2 Tbsp chili garlic sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar

Fresh Vegetables

  • 1 carrot
  • 1 cucumber
  • 2 green onions

Other

  • 4 large eggs
  • 1/4 cup kimchi
  • 1 Tbsp sesame seeds


Instructions

  1. Cook the rice: If you don’t have cooked rice ready, start by cooking 4 cups of jasmine rice according to package instructions so it’s ready when assembling the bowls.
  2. Sauté the spinach: Heat a large skillet over medium heat and add 1/2 tablespoon of cooking oil. Once hot, add the fresh spinach and sauté for a few minutes until wilted. Drizzle 1 teaspoon of toasted sesame oil over the spinach, season lightly with a pinch of salt, and transfer to a clean bowl.
  3. Cook the ground beef: In the same skillet used for the spinach, add 1/2 pound of ground beef over medium heat. Cook until fully browned and no longer pink. Add 2 tablespoons of chili garlic sauce, 1 tablespoon soy sauce, and 1 tablespoon brown sugar. Stir everything together and cook for an additional minute to combine the flavors. Remove from heat.
  4. Prepare the fresh vegetables: Peel and grate 1 carrot using a large-holed grater. Thinly slice 1 cucumber and 2 green onions. Set aside for assembling the bowls.
  5. Cook the eggs: Fry or soft boil 4 large eggs according to your preference. If meal prepping, cook the eggs fresh each day for best taste and texture.
  6. Assemble the bowls: Divide the cooked jasmine rice into four bowls, about 1 cup per bowl. Add 1/4 of the sautéed spinach and 1/4 of the spiced ground beef to each bowl. Top with sliced cucumber, shredded carrot, a cooked egg, and about 1 tablespoon of kimchi. Garnish with sliced green onions and sprinkle 1 tablespoon of sesame seeds evenly among the bowls. Serve immediately.
